Why does everyone always roll their eyes when you say, “hummus”? I mean, is it such a bad thing? Is it too bland? Too been there, done that? Or maybe because it’s not Paleo-friendly?
I’m not sure why hummus is always the joke of the party. It’s freakin good. And by adding pumpkin and chipotle spices, it’s over the top. You can always use the spices separately, but Primal Palate has THE BEST taco seasoning. It’s got this deep chipotle flavor that is much more mature than your average taco seasoning.
The only limit to the dippers is your imagination. Seasonal veggies should always be standard.
Add some gluten free tortilla chips. They make so many different brands and flavors of healthier tortilla chips, I don’t know why you would purchase mainstream anymore.
Or make your own grain free tortillas and cut them up to serve. The possibilities are endless!
We grow our own pumpkins and make our own pumpkin puree. If you purchase from the store, be sure to purchase organic pumpkin puree.
I always like to drizzle a little olive oil and paprika for presentation. You can also add some of your own pumpkin seeds.
Aside from being one of the yummiest food on the planet, pumpkin is full of Vitamin A which boosts vision, and is one of the best-known sources of the antioxidant beta-carotene, Vitamin C. It’s full of fiber, it may help to protect against cancer, asthma, and heart disease, and increase your immunity.
Smokey Chipotle Pumpkin Hummus Recipe
Smokey Chipotle Pumpkin Hummus
- 1 can or 15 oz organic chickpeas
- 1/4 cup tahini
- 1/2 cup pumpkin puree
- 1 TBSP taco seasoning (mix of chipotle, chili powder, Himalayan salt, paprika, black pepper, cumin, garlic)
- 2 TBSP garlic
- 1 TBSP extra virgin olive oil
Mix all ingredients together in a food processor.
Top with additional olive oil and paprika.
