Is there anything better than Taco Tuesday? Don’t feel like you need to be left out if you can’t eat a traditional flour tortilla, or aren’t a fan of the gluten free corn tortillas. These gluten free and grain free tortillas are super easy to make and the perfect flavor and consistency. But don’t let it stop with Taco Tuesday. There are so many other recipes you can use these with!

Otto’s Cassava Flour is the gold standard. They have a recipe on the back of the package, which I followed, but this version actually works better. I think so, anyway. You can purchase Otto’s Cassava Flour at Thrive Market or on Amazon.

You will want the consistency of the dough to be like wet sand. You can make smaller tortillas for carnitas, medium size tortillas for tacos or larger size tortillas for burritos or wraps.

Word of caution: These do not use any kind of oil in the skillet, which means you really need to watch the heat. Start with medium heat and adjust lower as needed to ensure the bottom of your skillet doesn’t burn. Trust me, I learned my lesson the hard way!

Health Benefits of Cassava

Cassava (also called manioc or yuca) is a root plant/tuber which is high in carbohydrates and calories, but low on the glycemic index. Cassava is high in B-complex vitamins, iron, zinc, calcium, magnesium, and potassium.

Cassava flour is gluten free, grain free, paleo, and AIP compliant. Since you are only adding water and a little salt to this recipe, these tortillas are as well.

 

 

This recipe makes a lot. You can always halve the recipe, but I like to make a big batch and then store them in the freezer. They will last for a couple of months.
