If pancakes are your favorite breakfast food, and you want the option of making them gluten free and/or vegan, then these lemon poppy seed pancakes are going to be your new Saturday morning tradition!
These pancakes are fluffy and lemony and insanely delicious. Add a pat of vegan butter on top and you are all set – you don’t even need maple syrup. Although everything goes great with maple syrup!
Cooking and baking gluten free and/or vegan is very different than the traditional way. For example, traditional pancakes will bubble a little bit when they are ready to be flipped. These pancakes – you have to watch and flip them when they start to turn golden brown. But same as traditional pancakes, you will want to cook them on a hot skillet.
I like to use fresh lemons, lemon zest and lemon essential oil. The combination brings out the brightness of the lemon flavor and gives it a fresh taste.
