Chocolate truffles. They melt in your mouth. Mint chocolate truffles add a layer of extra yum. But what about those who are dairy free or vegan? Trust me when I tell you… these vegan truffles will rival those with cream. They melt in your mouth. They will leave you wanting more. And they fit in with your nutrition protocol.
These mint chocolate truffles are great for any time of the year. You can color them with all-natural green food coloring for St. Patrick’s Day, or use green stripes over white chocolate for Christmas. Or no extra coloring and enjoy them any day!
If you have made truffles before, you know they can be cantankerous. Add the non-dairy requirement and they can be more difficult. But don’t let that stop you.
The rule of thumb is that you want twice + the amount of chocolate to creamer. So add a little more than double the amount of chocolate compared to the creamer. It’s not going to firm up as well as heavy cream used in traditional truffles. Experiment with placing the truffles in the fridge or the freezer to see which way creates the best firmness. And get emotionally prepared for messy hands. You’re tough. You can handle it.
