It’s something about this time of year. It’s not quite spring yet, and Easter is around the corner. What’s the best part about the Easter season? Well, aside from the obvious? CARROT CAKE!!!
Today, I took the flavors of carrot cake and made it into 2 smoothie version – one is healthy and one is kid-friendly.
My husband who is my #1 food critic had to taste it and give me his opinion. “Hol…this needs to be a Popsicle! Where are the Popsicle molds? I’ll put it in the freezer and betcha it will taste even better. ” The verdict? “It’s a winner.” So there’s that option too! PS – don’t tell him, but he’s right. Shhhh… it’s our secret!
Ingredients and Directions
1 1/2 cups cut and peeled organic carrots
1 1/2 cup flax or almond milk
1 tsp vanilla
1 TBSP pumpkin pie spice (we love Primal Palate!)
1 TBSP maple syrup
For the kid-friendly version, add 1/4 cup Dollop vanilla frosting
Mix all of the ingredients in a Nutri Ninja or blender.
