One of my favorite dinners is Shrimp Scampi. There is something so comforting about the sauteed shrimp on top of a big ole bowl of (gluten-free) spaghetti. It seems like everyone is on the zoodle bandwagon lately, so I thought… why not give them a try and make some Zoodle Shrimp Scampi. Read on to see how it turned out!
Before I even get started, I must come clean. I wasn’t sure how the zoodles would turn out, and I made a batch of gluten-free spaghetti as a backup. I didn’t want my family to go hungry if it was a recipe fail. In my (FREE) eBook Transform Your Pantry – Transform Your Life, I actually used this exact dinner as an example of learning to cook “clean” for your family and not being ashamed or embarrassed to make some back-up food just in case.
Zoodles are all the rage these days, and zucchini makes the perfect spaghetti replacement.
The recipe was perfect right out the gate. The only recommendation I would make when you are using a zoodle maker, is to make sure the ribbons are cut and not one verrrrry long ribbon. You want them to mimic spaghetti noodles in length. The family loved the zoodles and asked that they replace spaghetti from now on. I’m not as big of a fan of zucchini, so I mixed the zoodles in with the spaghetti noodles.

If you can sharpen a pencil, you can use a zoodle maker. Now that I realized using a zoodle maker isn’t difficult, scary, nor expensive, I’m on the lookout for some more recipes to try. Carrots, zucchinis, and cucumbers… look out!!!
