Vegetable soup is the perfect winter comfort food. Packed full of vitamins and cancer-fighting anti-oxidants, it’s also the quintessential health food. I used GrandBob’s Crock Pot recipe and made some minor changes to accommodate the busy and frugal family. Dump the ingredients into your slow cooker and in a few effortless hours you will have a warm and delicious vegetable soup that is Paleo, Whole30 compliant, and Keto.

Since GrandBob is retired, he has a little extra time in his schedule, and normally purchases fresh veggies where possible, and cuts them up. I used 100% frozen (and mostly organic) veggies. We saved approximately 30 minutes of prep time. For a large sized crock pot, you will want about 40-50 ounces of veggies – fresh or frozen. Ideally, you want to let the frozen veggies sit out for an hour ahead of time, but if you forget, they are fine to use right away. See below for which vegetables are ok on each of the nutrition protocols.
When I was at the store purchasing ingredients, I forgot what kind of tomatoes, to buy. I ended up with a 28 ounce can of basil crushed tomatoes and they were perfect!
The broth. Always be sure to purchase organic broth (or make your own) and ensure that the ingredients are pure. Depending on your taste preference and nutrition protocol, you can use either vegetable broth or chicken broth. I personally think that vegetable broth is best.

Which Veggies are What?
For gluten-free and/or vegan, you can enjoy any veggies you wish.
If you follow Paleo, Whole30, or Keto, then any kind of beans, corn, or peas are NOT allowed.
Sweet potatoes are ok for Paleo and Whole30, but not Keto.
White potatoes are only ok for Whole30, but not Paleo or Keto.

Ingredients
- 40-50 oz Fresh or Frozen Vegetables Organic is best!
- 28 oz Can Crushed Tomatoes
- 32 oz Vegetable Broth Or Chicken if you aren't vegan
- 4 TBSP Italian Seasoning We love Primal Palate!
- 4 TBSP Minced Garlic
- Salt and Pepper to Taste
Instructions

Add all ingredients to your Crock Pot and stir.

Cook on high for 2-3 hours or low for 6-8 hours.

Add water if needed. Enjoy!
