The Starbucks Unicorn Frappuccino has 410 calories, 16 fat grams, 62 grams of carbs, and 59 grams of sugar. It has no redeeming qualities, other than being an Instagram sensation.

 

 

As I’ve been watching the unicorn everything craze, I’ve also been wondering how to make a unicorn something that is super crazy healthy. This version fits the bill. No added sugar, or minimal if you want a little bit. It’s naturally sweet from the berries. And it’s also Paleo and Keto. It doesn’t obviously have the same taste as the Starbucks version, but it’s the healthy version, and that’s all that matters to me! Same fun colors!

The base on this smoothie is our friend the avocado.  Avocados are high in vitamin K, vitamin C, folate, vitamins B5 and B6, and contain more potassium than bananas. They contain 15 grams of healthy fats, but don’t let that scare you because these fats are known to reduce inflammation and also help with the absorption of nutrients from plant foods. They are heart-healthy and may help to lower cholesterol and triglycerides and fight cancer. They are loaded with fiber and work wonders to help keep you full. They are the darlings of the ever popular Keto Movement.

You can be as creative as you want, but it’s super easy to make! Add some berries, throw everything in your Nutri Ninja, grab a fun straw, and enjoy! The best part – mix up the pink first, and then you don’t even have to clean the Ninja when you make the blueberry portion. You can use strawberries or raspberries, or heck… go wild and crazy and mix it up!

You can add as much or as little vegan milk base (almond milk, flax milk, etc) as you like, depending on if you like it thicker or thinner consistency.
