I love any recipe made with pumpkin. It’s one of my favorite foods, and it’s super crazy healthy for you! This creamy pumpkin sauce is vegan and dairy free, and is versatile enough to be served over gluten free pasta, regular pasta, and even pasta with grilled chicken.
This pumpkin sauce is a healthier alternative to your traditional jar of red pasta sauce. If you want quick and easy, it takes the same amount of time to make. Add the pumpkin, almond milk (or other dairy free milk) and spices and heat while the pasta is cooking.
I eat this just as it’s pictured, but I will make grilled chicken for the boys to add to it. See how versatile this recipe is?!?!?

Any kind of gluten free pasta will do. I prefer a rotini style. Cybele makes some delicious whole-food pasta, and one is even pumpkin flavored! WOOT!
