This salad is super quick and easy to throw together. Cut up some organic romaine hearts and then add a pear, an avocado, and some pomegranates. You can even top it with pecans or walnuts if you enjoy nuts, and some goat cheese if you are not vegan. It’s all about the options and enjoying your food!
I think pomegranates are the most perfect food on the planet! They are full of fiber, protein, Vitamin C, Vitamin K, folate, potassium, and also contain the antioxidant punicalagin and punicic acic, which is known for it’s heart benefits. Pomegranates are anti-inflammatory, they help to fight breast and prostate cancers, lower blood pressure, fight arthritis, lower risk of heart disease, help fight bacterial and fungal infections, and improve memory.
We have some backup bottles in the fridge, but we have almost completely transitioned to making our own salad dressing. I even found an adorable container since we make so much of it. Each week it’s a different flavor to try on our salads.
My challenge to myself this year is to make better salads. This salad reminds me of one of those fancy salads you would get at a restaurant. #challengeaccepted
What I also love about this salad is that it’s so filling, especially if you wish to add some nuts or cheese. It’s full enough to be a complete meal for me.
