Does it get any more summer comfort food than a delicious pasta salad? If you want to whip up a quick and easy recipe for your summer picnic or potluck, this one is it. And PS – it’s red, white and blue for your patriotic 4th of July and Memorial Day parties. Plus its gluten free, dairy free, vegan, and made with whole foods and clean ingredients. Time to start cooking!
We love hosting our annual Patriot’s Palooza Memorial Day party. This pasta salad is a huge hit. And it’s perfect for summer potlucks and picnics since it’s dairy and egg free.
This recipe is:
- Gluten Free
- Dairy Free
- Non-GMO Project Verified
- Soy Free
Although the marinade is paleo and ketogenic, the pasta is made with lentils, which are not on the paleo or keto protocols. But it is 100% whole foods and clean ingredients. The red pasta is made with red lentils, red bell peppers, and tomatoes. The white pasta is made with green lentils, cauliflowers, and parsnips. The purple pasta is made with red lentils, beets, carrots, and sweet potatoes.
- Cook all three pastas together, according to the directions on the box. Remember, when cooking lentil-based pasta in boiling water, it will foam up, so keep a close eye on it.
- Add 1 1/2 bottles of the Italian marinade. I always like to add a little, stir, add a little, stir so that I don’t add too much in the beginning.
- Let chill and serve.
- You can always add a little more of the marinade if needed before serving.
