Sweet Pea the cat is one of those cats who is super sweet to his owner, but scared to death of anyone else in the house. Oh and yes, Sweet Pea is a male. Every time we visit my in-laws, the cat scampers down to the basement. So it’s not like Sweet Pea and I were having brunch together and decided to trade recipes. Sorry folks, the story is not that crazy!
Sweet Pea enjoys treats like the rest of us. And Sweet Pea also has a very particular palate. The only kind of ice cream that Sweet Pea will eat is maple walnut ice cream. My mother-in-law told me all about how he will stick up his nose at any other kind of ice cream.
Which of course got me thinking… I could make a vegan version. Yeah, that sounds really good. Ohhhhhh and you know what else… let’s add a little maple bourbon topping to it. Optional of course if you don’t want to cook with the alcohol. Now I know why it’s Sweet Pea’s favorite ice cream. And the vegan version is mine!
This recipe is so easy to make. Soak the cashews for a few hours or overnight, and then throw everything in your blender or Nutri Ninja and freeze.
