Lemon cookies are so light and delicious. They are one of my all-time favorites. These are made with cassava flour. They are gluten and grain free, along with dairy free and vegan. You can eat them as-is, or top with some frosting and fruit to make a mini fruit pizza. Regardless of how you enjoy, these cookies are sure to be your new favorites.
This cookie was the result of numerous epic fails. I knew this cookie had potential. I could taste what I wanted. But everything kept going wrong. And then it all came together in a lemon sugar cassava cookie perfection. You know… that kind of perfection when you take a bit of a cookie and the skies open up and angels sing. Yeah. That.
I love baking with almond flour, but my latest obsession is Otto’s Cassava Flour. It’s yucca root ground up into a flour. That’s it. And it’s so versatile! The lemon zest really brings out the lightness of the lemon flavor, and adding in a few drops of Lemon Essential Oil deepens the flavor as well.

You can enjoy the lemon cookies plain, but it’s also fun to add some vegan frosting and some berries on top. How cute would these be for a 4th of July party or other patriotic soiree?
