My boys LOVE lamb! They are my carnivores, but I am careful about the type of meat I feed to them. We always purchase grass-fed beef, bison, or lamb – meats that are more free-range and also free of antibiotics. Every once in a blue moon, I’ll have a small bite of lamb. Shhhh…. don’t tell!
There are several things that are absolutely beautiful about this recipe.
- It can be prepared in around 20 minutes.
- It’s an entire meal.
- You can customize it to be Paleo, Whole30, or Keto.
Awesome, right?!?
It’s also a fun way to introduce younger kids to new foods. Kids may not always love vegetables, but what’s not to love about a zucchini boat?
Paleo + Whole30 + Keto Options
Let’s talk Paleo, Whole30, and Keto. Lentils are not Paleo, Whole30, or Keto compliant. If you don’t follow any of these protocols and you love lentils, add them to the mix. If you don’t want to include them, you can make the lamb without the lentils.
Also, if you enjoy dairy, go for a Tzatziki sauce to top off (not recommended, but we wanted to give you the option).
Otherwords, Primal Kitchen has a dressing that is easy enough to substitute. Green Goddess is Paleo, Whole30, and Keto approved.
Or if you don’t want the topping, you can leave it out altogether.

I am obsessed… obsessed I tell you… with Primal Palate’s Gyro Seasoning to use on lamb dishes. The flavors are bold and deep. If you want to create your own Gyro Mix, include Himalayan Pink Salt, Oregano, Marjoram, Thyme, and Garlic.
Obviously, grilling the zucchini is the best way to rock this recipe. But if you don’t have a grill or the weather isn’t cooperating, or you ran out of propane (WHAT!?!)… do not fret. You can follow the same method, and place the zucchini on a baking sheet in the oven at 350 degrees for 15 minutes give or take, depending on the size of your zucchini.
Have you seen all of those videos for the Peeler-Slicer-Shredder? I can’t believe I bought into the hype and impulse-purchased the trio! I expected them to be cheap plastic shipped from China. Guess what… they were made of cheap plastic and were shipped from China. BUT… holy cow do they work well. You can use the U-end to scoop the seeds out of the zucchini. Or use a spoon. That’s easy too.
