You know how sometimes you see a recipe and it’s way out of your comfort zone and sounds a little bizarre, but you still want to try it? Like it’s calling you in all of its taste weirdness. That was me. And this recipe. It’s a honey thyme vegan ice cream with grilled peaches. Trust me. Just trust me.
I found my muse in a magazine. It was a recipe for full on dairy ice cream, which of course I don’t make. I tried it over and over until I finally got the perfect blend of ingredients for a vegan substitute. (I’m a vegan who eats honey – don’t judge – we all respect everyone’s health and food decisions here!)
What I love about this recipe is that it is truly farm to table. Regardless of where you live, you can grow thyme indoors out outside. When we first planted thyme in our herb garden, I knew it was invasive, but had no clue how fast it would grow! I’m always looking for new recipes to try and also dry and preserve thyme for future use.
The next local ingredient is the honey. I’ve been reading a lot about how local honey helps seasonal allergies. We live in Alexandria, VA, which is right outside of Washington, DC. I found this local honey on Amazon Fresh and ordered it.
When our Farmer’s Market opened up for the season, much to my surprise… guess who was in the first booth! Honeycomb Heroes from Stafford, VA. It was awesome to make the owner and learned that they are a Veteran owned company. I told them how I’ve been ordering their honey on Amazon and they were just as excited to meet me as a customer. In addition to Amazon, you can find local honey distributors at your local farmer’s market and local organic markets.

The ice cream combines the vanilla, honey, and thyme flavors. You can eat it alone or even better, add it on top of grilled peaches. It gives peaches and cream a whole new twist. The ice cream base is made with cashews. Add your ingredients to your blender or Nutri Ninja and freeze and you are ready to enjoy.
Yeah, so it was a pretty hot day when I took the glamour shots of the ice cream. Can we say I’m melting…..!!!!! But seriously… melting ice cream on top of grilled peaches? The pictures may not be magazine-worthy, but the taste certainly was. A little drizzle of honey on top makes it perfection.
