Should I start with tacos or Halloween? Is there even a choice. We’ll begin with tacos. I don’t think there is a person on the planet who loves tacos more than I do. Because of my health transformation, tacos are now an occasional treat rather than the Taco Tuesday staple they used to be.

We make our tacos with bison rather than ground beef. You can choose either, but always make sure your meat choices are free-range, grass-fed, and free of hormones and antibiotics.

The recipe sounds like a lot of work, but it really isn’t. I mean, tacos take 15 minutes to make. While the meat is cooking, you make the rice and prep the peppers. And then the remaining 30 minutes is all time in the oven.

You can use your favorite rice but always check the label to ensure it is certified gluten free. You can make plain rice, spanish rice, or even a cilantro rice. The salsa is optional. My boys like it on the side rather than cooked in.

There are so many great vegan cheese options these days, even in your regular grocery stores. My favorite is Daiya. You can pick a taco, Mexican, or cheddar-style cheese.

Halloween in our neighborhood is like the G-rated version of Mardi Gras. The police shut down the streets, parents gather around fire pits in the front yards, and the kids run around and get way too much candy. Stepson always has a gaggle of friends over for the night. I know the boys are going to love these taco stuffed peppers for the mini Halloween party.

Halloween Taco Stuffed Peppers Recipe

 

Halloween Taco Stuffed Peppers

Gluten Free with Dairy Free Option

Ingredients

  • 6-8 Orange Peppers
  • 1 Package or Pound Ground Bison or Beef
  • 1 Box Rice (Plain, Spanish, or Cilantro)
  • 1/2 Cup Shredded Mexican Style Cheese Vegan or Regular
  • 1 Package Taco Sauce
  • 2 tsp Taco Seasoning
  • 8 oz Salsa Optional

Instructions

  1. Preheat oven 300 degrees

  2. Make rice (usually around 20-25 minutes) for one box.

  3. Meanwhile, ground meat in skillet and cook until no longer pink. Add taco sauce and seasoning once cooked. Mix together and turn off heat.

  4. Cut the top off the peppers and scoop out the seeds.

  5. With a paring knife, cut out a jack o' lantern face

  6. Add rice (and optional salsa) to the meat. Mix together.

  7. Place peppers in a casserole dish so they are snuggled in and not able to fall over.

  8. Add meat-rice mix to the peppers.

  9. Bake at 300 degrees for 15 minutes.

  10. Top with your favorite shredded cheese.

  11. Bake 15 more minutes. Enjoy!
