Several years ago, Hubby and I went out to dinner and the dessert they served was grilled watermelon. This was the first time we had heard of it and we were super curious to try it. OHEMGEE!!!!! We talked about this dessert for weeks. Weeks, I’m telling you! And of course, I had to run out and buy a watermelon and try it myself. It was just as good as the restaurant. The recipe is super simple, and it only takes a few minutes to make.
I don’t eat dairy, so I enjoy mine with just the balsamic vinegar. But adding some crumbled feta cheese kicks the flavor up a notch. Be sure to purchase a good quality balsamic vinegar. Many towns have one of those specialty stores which stock flavored balsamic. A fig, pomegranate, or blueberry balsamic would be delicious. Even better!
Health Benefits of Watermelon
Watermelon is made up of over 90% water. Maybe that’s how it got its name? It’s high in Vitamin C, Vitamin A, Magnesium, Fiber, Potassium, Carotenoids, and Lycopene. The mighty watermelon may also help to improve heart health, lower cancer risk, clear the kidneys, relieve muscle pain, and boost eye health. It is also an antioxidant and is good for digestion.
Grilled Watermelon Recipe
Cut watermelon into triangles.
Grill on each side for 4-5 minutes.
Drizzle with a good quality Balsamic Vinegar.
If you enjoy cheese, add some Feta Cheese on top.
