You can use your own homemade fig jam or your favorite store-bought jam. I actually make my own gluten and grain free tortillas and then keep them in the freezer for quick and easy meals and snacks. We don’t do a lot of dairy here at Pink Fortitude. Goat cheese is the mildest for those who want to enjoy dairy for a special occasion.

Ingredients

  • 8 oz Fig Jam or Spread
  • 8 oz Goat Cheese
  • 4 Gluten Free Tortillas
  • 4 oz Pistachios

Instructions

  1. Preheat oven to 350 degrees.

  2. Spread fig jam over tortillas.

  3. Cover with goat cheese.

  4. Sprinkle with pistachios.

  5. Bake on a pizza stone at 350 degrees for 10 minutes or until the cheese is warm and melted.
