My Mother-in-Law makes the best buttermilk biscuits. We call them “bus-kets” because that is what Hubby called them when he was a child growing up. I’m on a mission to recreate all of my favorite recipes and make them more in line with “clean” eating. Buttermilk buskets would be great. But cheesy, cheddar and bacon buskets… I don’t think it could get any better!

 

 

These biscuits are so quick and easy to make. You can mix up the ingredients in only a few minutes and then bake for about 25 minutes in the oven. The best part – you can freeze them and quickly reheat them in the oven or microwave. I microwave mine for 30-45 seconds and that’s it. Perfect for a delicious and filling breakfast to go for your hectic week. Or even better to serve for breakfast if you have guests in your home. They will think you woke up early to treat them!

Versatility to Your Diet

Paleo or Keto – The ingredients in vegan cheese and egg replacer can be questionable on these protocols.  Feel free to substitute the same amount of real cheddar cheese and 2 eggs.

Dairy/Egg Free – Use the recipe as/is.

Bulletproof – We use Bulletproof Brain Octane in the recipe. If you don’t wish to make it Bulletproof, but still have a similar Paleo/Keto vibe, you can substitute 1/4 cup of melted grass-fed butter or ghee.

Why These Ingredients?

The right kinds of fats are good for your brain, and also to help you feel satiated. My family is addicted to the Bulletproof Brain Octane. Hubby and Stepson use it in their coffee and we love using it in other foods too. While there will never be a perfect substitute for real cheddar cheese, if you are dairy free, Daiya cheese is the next best thing. Added into these biscuits, you will never know the difference.

Make sure your bacon is nitrate free. Bacon is not exactly a great cancer-fighting food, in fact, it’s kinda the opposite. But… it’s bacon.

Speaking of bacon, unless you are super crazy willpower person, I would recommend making two packages of bacon. Because who are we kidding here? Are you really going to make one package of bacon and not eat any and use it all for the recipe? And if you “only eat one piece” are you really going to eat just one piece? Make two packages. You are welcome.

These cheddar bacon biscuits will make your brain happy. The best part is that they have a minuscule amount of carbs, but they taste like carb-loaded comfort food.
