Pancakes are the ultimate comfort food. They are also a lot of fun to eat. I have no idea why, but you can’t argue with the facts. I can seriously eat an entire stack. I have no shame. Pumpkin pancakes – do they get any better? How about these Buckwheat Pumpkin Pancakes which are both gluten-free and vegan. It’s breakfast perfection.
Don’t ask what rock I’ve been living under, but it’s only recently that I was introduced to buckwheat. Maybe because it had wheat in the title, I thought it was a wheat product? It’s actually an ancient grain, a seed, and it’s wheat and gluten-free.
Buckwheat has one of those flavors that mesh perfectly with fall flavors. So yeah… buckwheat pumpkin pancakes… consider me addicted!
Ahhhhh… buckwheat. Despite having wheat in the title, it does not contain wheat. It’s actually an ancient grain, a seed, and it’s wheat and gluten free. It has a deep, rich flavor, so it’s a grand slam for fall baking.
Buckwheat is high in protein and fiber, it has 12 amino acids, vitamins, minerals, antioxidants, and may help with lowering cholesterol, lowering blood pressure, improving digestion, and relieving constipation. Buckwheat contains approximately 11-14 grams of protein per 100 grams. It also contains manganese, magnesium, zinc, iron, and folate.
Aside from being one of the yummiest food on the planet, pumpkin is full of Vitamin A which boosts vision, and is one of the best-known sources of the antioxidant beta-carotene, Vitamin C. It’s full of fiber, it may help to protect against cancer, asthma, and heart disease, and increase your immunity.

Buckwheat Pumpkin Pancakes Recipe
Buckwheat Pumpkin Pancakes - Gluten Free & Vegan
- 2 Cups Buckwheat flour
- 1 Vegan egg
- 1 TBSP Pumpkin Spice
- 1 1/2 - 2 Cup Vegan Milk Almond, flax, cashew, etc
- 1 Can Organic Pumpkin approx 15 oz
- 1/2 Cup Maple Syrup
- Vegan Butter
In a medium-size bowl, mix together all of the ingredients except for the vegan milk and vegan butter.
Gradually add the vegan milk and stir until the batter is the consistency of pancake batter.
Preheat a cast iron skillet over medium heat.
Melt a pat of vegan butter in the skillet.
Add pancake batter to your desired size pancake.
Gluten free pancakes will NOT bubble like normal pancakes - check for when the bottom is golden brown and then flip.
Remove from the skillet when the other side is golden brown.
Add another pat of vegan butter to the skillet in between batches.
Serve with maple syrup.
