My husband is a crazed hummus and veggie loving freakazoid. When I was at the store the other week getting our hummus rations, I saw a new flavor – brownie batter. I did a double-take. My curiosity got the best of me, and I had to check out the ingredients. To my chagrin, it was made with chickpeas, the standard in must hummuses.

Hummi? What is the plural of hummus? Does it even have a plural?

Anyway, with our Peace, Love and Chocolate ladies social and breast cancer fundraiser right around the corner, I knew this would be my next creation.

Only I wasn’t thrilled with chickpeas as the base. Even if I totally and completely masked the flavor of chickpeas with the cacao, I would still know it’s there. I love a garbanzo bean as much as the next girl. But chocolate is… well… sacred.

Soooo… I had to come up with the alternate. Cashews. And then I decided to make it paleo (and gluten-free and vegan of course!).

We have good news and bad news.

First, let’s start with the health benefits. Raw cacao is crazy healthy! It’s got 20 times the antioxidants than in blueberries. It’s also high in magnesium, iron, and calcium. The best part – it is full of happy mood-boosting serotonin.

Now the sad news. This is a calorie bomb. Cashews are very caloric. I joke about eating the entire vat, but I don’t recommend it. Unless you want your hips to expand. Then that’s on you.

 

Recipe Hacks

If you have ever worked with cashews, you know that you need to soak them. It’s recommended to soak them for several hours or even overnight. I recently learned that if you pour very hot or even boiling water over them to soak, it quickens the process.

Next, you can use either a food processor or Nutri Bullet. My preference for this is a Nutri Bullet. You will have to stop and scrape but it’s a lot less mess and it works almost as good as a food processor.

Finally, start with 1/4 cup of your favorite vegan milk (I use cashew milk) and then add a little bit more until the hummus reaches your desired consistency.

Brownie Batter Hummus Recipe

Brownie Batter Hummus - Paleo, Gluten-Free and Vegan

Ingredients

  • 1/4 Cup Raw Cacao Powder
  • 1 Cup Cashews
  • 1/2 Cup Maple Syrup
  • 1/4 - 1/2 Cup Vegan Milk
  • 1/2 Cup Seed Butter

Instructions

  1. Soak cashews for 2-4 hours.

  2. Drain.

  3. Mix together all ingredients in a food processor, Nutri Bullet or blender.

  4. Stop and scrape as needed.

  5. Add more vegan milk until hummus reaches your desired consistency.
