Sometimes you gotta shake things up. Like hummus. It’s awesome. But the same ole hummus gets a little old after awhile. This beet hummus is perfect for Valentine’s Day, a baby or bridal shower, or any festive occasion where the crudites` need a date who is pretty in pink.
We host a ladies social in our home every year, the famous Peace, Love, and Chocolate that you may have heard of. It’s a fundraiser for breast cancer and all of the ladies dress up in pink. This beet hummus is a perfect companion to the crudite.
You can always serve it with organic, gluten-free, non-GMO tortilla chips, and even homemade beet chips!
I normally use a food processor, but you can always use a Nutri Ninja with a larger cup. Feel free to add a little more olive oil to your desired consistency. Isn’t this the most absolutely beautiful dip for your party or pink soiree?
