We host a ladies social in our home every year, the famous Peace, Love, and Chocolate that you may have heard of. It’s a fundraiser for breast cancer and all of the ladies dress up in pink. This beet hummus is a perfect companion to the crudite.

You can always serve it with organic, gluten-free, non-GMO tortilla chips, and even homemade beet chips!

I normally use a food processor, but you can always use a Nutri Ninja with a larger cup. Feel free to add a little more olive oil to your desired consistency. Isn’t this the most absolutely beautiful dip for your party or pink soiree?

Ingredients

  • 1 Can Beets 15 oz
  • 1 Can Garbanzo Beans (Chickpeas) 15 oz
  • 1/4 Cup Pumpkin Seeds
  • Juice from one lemon
  • 2-3+ TBSP Extra Virgin Olive Oil or more
  • Season with salt and pepper

Instructions

  1. Add all ingredients to a food processor and blend together, scraping down sides as needed.

  2. Add more olive oil as needed to desired consistency.

  3. Enjoy or store in a closed container in the refrigerator.
