This semi-homemade apple muffins recipe is gluten-free, vegan, has limited sugar, and is kid-approved. What a great way to enjoy the tastes of the fall season for breakfast or as an afternoon snack.
We are on a mission to find healthy and protein-filled grab-and-go breakfast foods and treats for Stepson. While these aren’t his favorite, he does approve. Me on the other hand… I would eat the entire batch in one sitting if I could!
I use 1/4 cup of honey to sweeten them up. I am a “health” vegan and not a “purist” vegan, so I do frequently use honey in baked goods as a sugar substitute. If you don’t want to use honey, you can substitute your favorite all-natural sweetener.
I added a plant-based vegan and gluten-free vanilla protein powder to the apple muffins mix. As a vegan, I love getting my protein this way, and especially for Stepson, adding protein to a morning breakfast is great to wake up the brain.
While it’s not on the recipe card, I also add Primal Palate’s Apple Pie Spice. YUM!

These sound yummy! I could use some of these for a quick breakfast. I’ve never thought of adding protein powder to muffins.
